Salmon with Blueberries (Pink recipe for Breast Cancer awareness)


I developed this recipe to help raise awareness for Breast Cancer, after a close friend was diagnosed with breast cancer. She became one of the statistics, one of the eight women who get breast cancer in their lifetime and the 1/2074 who are diagnosed under 40 years old. For me, this was my third friend under 40.

The disease is likely to be much more aggressive in young women and is often found at later stages, as detection in this age group is based on self-examination. Breast Cancer Awareness month is to remind us all to perform these checks and to give insight into what it’s like to be diagnosed, treated and live with Breast Cancer. Ingredients

4 Salmon fillet
Vegetables of choice

Sauce
100g frozen blueberries
20g balsamic vinegar
40g honey
1 lemon, juice of

 

Method

  1. Insert mixer blade
  2. Add all sauce ingredients
  3. Fit external deep steam basket
  4. Line with baking paper and pierce in several places
  5. Add salmon fillets
  6. Insert shallow steam basket
  7. Add vegetables depending on their steaming duration1
  8. Speed 3 / 100C / 15 mins
  9. Serve immediately

 

Notes

  1. Add vegetables during cooking to the shallow steam basket as required by their steaming duration e.g. carrots take 15 minutes so should be added at the start
