Banana Bread / Muffins


This is a lovely moist egg free banana bread recipe, that can be made as traditional loaves (2) or as individual muffins (18). You can add a few chocolate chips or sultanas with the oats if desired.

Instructions
  1. Heat oven to 170C (fan forced)
  2. Insert dough blade
  3. Add banana
  4. Speed 9 / 30 sec / stopper maxi
  5. Add all remaining ingredients, except oats, choc chips & sultanas
  6. Pastry P2 / stopper maxi
  7. Pause with 30 sec remaining
  8. Add oats (and chocolate chips or sultanas if using) to CC bowl
  9. Resume program
  10. Pour into 2 greased loaf tins or 18 medium muffin tins
  11. Bake the loaves for approximately 40 mins or 17 mins for the muffins, or until cooked through
