Banana Bread / Muffins 2

Makes 1 680g loft or 18 muffins

Cooking difficulty: Easy

Preparation time: 15 minutes

Bake time: 17 – 40 minutes


This is a lovely moist egg free banana bread recipe, that can be made as at traditional loaf or as individual muffins (18). You can add a few chocolate chips or sultanas with the oats if desired.


Banana Choc Chip Muffins

Banana Choc Chip Muffins


300g very ripe banana
450g self raising flour
7g baking powder
135g brown sugar
150g butter, soft
375g lite milk
10g vanilla essence
150g rolled oats
50g dark chocolate chips OR 200g sultanas (optional)


CC Method

  1. Heat oven to 170C (fan forced)
  2. Insert dough blade
  3. Add banana
  4. Speed 9 / 30 sec / maxi steam
  5. Add all remaining ingredients, except oats
  6. Pastry P2 / maxi steam
  7. Pause with 30 secs remaining
  8. Add oats (and chocolate chips or sultanas if using) to CC bowl
  9. Resume program
  10. Pour into 2 greased loaf tins or 18 medium muffin tins
  11. Bake the loaves for approximately 40 mins or 17 mins for the muffins, or until cooked through

    The mixture was enough for bar of Banana bread, plus some muffins. Didn’t last long- kids ate almost half of it as soon as it had cooled down. Thanks Karen
